Gobhi ke danthal ki subzi
This is a Punjabi delicacy that is relished in winters. We Punjabis don’t believe in wasting any part of the food is it veggies either. Danthal is the lower part of the cauliflower/gobhi, which is usually discarded by most. This is my mom’s recipe and it turns out simply yum.
Ingredients:
- 1 kg danthal
- 3 onions finely sliced
- 5 tomatoes
- 1” ginger julienne
- 1 tsp garlic paste
- 1 tsp jeera
- 1 tsp red chilli powder
- 2-3 green chillies
- Salt as per taste
- 1/2 tsp haldi
- 1 tsp amchoor
- 2 tsp dhania powder
- 1 tsp garam masala
- 3 tbsp oil (I use mustard oil)
- Fresh coriander leaves
Instructions:
- Wash the danthal properly. Discard the hard parts. Slice the rest into 2” long wedges.
- In a pressure cooker add the mustard oil, once it heats up, add jeera & the finely sliced onions & garlic paste. Once the onion turns light brown, add in the ginger & green chillies.
- Next, add the danthal pieces. Cook them for 3-4 minutes.
- Add in the tomatoes
- Next add salt, Haldi & chilli powder.
- Cook for 1 whistle.
- Once cool, add the coriander powder, dry mango powder & garam masala. Do a taste check. Add finely chopped coriander leaves. Serve with a bread of your choice.
