Forgotten Recipes of Punjab

It is a traditional winter delicacy from Punjab. This is one of my Nani’s specialties from recipes of Punjab and many childhood memories are attached to this dish and that’s why I try to make it every year to remember that sweet aroma and rich earthy taste that fulfills the heart and mind.

Ingredients:
  • 1 cup basmati rice
  • 1/2 cup crumbled gur/jaggery
  • 2-3 green cardamom
  • 2-3 pieces of cinnamon
  • 2-3 black cardamom
  • 3 tbsp ghee/ clarified butter
  • 2 cups of water
  • Some chopped dry fruits for garnish.
Instructions:
  • Soak 1 cup basmati rice in water for 1/2 an hour.
  • Heat 3 tbsp ghee in a pressure cooker, fry some cashews and almonds in it, keep aside.
  • Now add 2 green elaichis, 1-2 pieces of cinnamon, and black cardamom, stir, add 1/2 cup crumbled gur, stir and quickly add 2 cups of water.
  • When the water starts to boil, add in rice and cook it open for 2-3 minutes. Close the lid and cook for 2 whistles.

Garnish with fried dry fruits.
Serve hot, Enjoy!
