Forgotten Recipes of Punjab

This traditional Punjabi curry was developed in rural Punjab by the farmers to stay warm in cold months. This vegan ginger-garlic is an immunity booster itself

I am sharing the recipes of Punjab which dominates with the flavor of tomato. You can increase the qty of ginger-garlic for more benefits. Though I have come across many variations on the internet – like making it soup-like with the addition of water, milk or curd. Some have also mentioned the addition of poppy seeds and 1 tsp besan.

Ingredients:
  • 2 tbsp mustard oil
  • 1 ginger
  • 1 finely chopped onion
  • 5-6 garlic pods
  • 2 chopped tomatoes
  • Turmeric 1 tsp
  • Salt as per taste
  • Green chillies 1-2
Instructions:
  1. In a pan, heat 2tbsp Mustard oil till it is really hot. Add the 1-2 inch ginger and saute for 2 mins.
  2. Add the 1 finely chopped onion, along with 2-3 garlic, and saute till deep brown in color.
  3. Add 2 chopped tomatoes and fry till oil starts leaving the side.
  4. Add salt, turmeric, and green chillies and cook well.
  5. Serve hot with paranthas on a cold winter afternoon.
