I am sharing the recipes of Punjab which dominates with the flavor of tomato. You can increase the qty of ginger-garlic for more benefits. Though I have come across many variations on the internet – like making it soup-like with the addition of water, milk or curd. Some have also mentioned the addition of poppy seeds and 1 tsp besan.
Ingredients:
- 2 tbsp mustard oil
- 1 ginger
- 1 finely chopped onion
- 5-6 garlic pods
- 2 chopped tomatoes
- Turmeric 1 tsp
- Salt as per taste
- Green chillies 1-2
Instructions:
- In a pan, heat 2tbsp Mustard oil till it is really hot. Add the 1-2 inch ginger and saute for 2 mins.
- Add the 1 finely chopped onion, along with 2-3 garlic, and saute till deep brown in color.
- Add 2 chopped tomatoes and fry till oil starts leaving the side.
- Add salt, turmeric, and green chillies and cook well.
- Serve hot with paranthas on a cold winter afternoon.
