Forgotten Recipes of Punjab

Punjabi Wadiyan/wadi chawal is one of the interesting recipes of Punjab, which is a complete meal in itself. 

The art of making Wadiyan is being forgotten as we tend to buy them from the market. I remember making them with my grandmother and used to be fun grinding the stuff and then making small blobs and putting them on an old white bed sheet for drying in the sun. The spicy Punjabi wadi and rice combination is simply tongue-tickling. The wadi is slightly fried before adding to the rice giving them a very earthy flavor.

Ingredients: 
  • 1 cup rice
  • 1 cup urad dal wadi
  • 5 tsp ghee
  • 1 tsp jeera
  • 1 onion sliced
  • 1 cup green peas
  • 2-3 green chillies
  • 1 tsp garam masala
  • Salt per taste
  • Juice of half lemon
  • Water 1.5 cups
Recipe: 
  1. Wash and soak 1 cup rice 
  2. Break urad dal wadi into small pieces. Shallow Fry them in Ghee.
  3. In a kadhai, add 2 tsp ghee, jeera, sliced onion and green chilli. Let the onions turn light brown, add salt, garam masala. Mix it well.
  4. Add the green peas, wadi, stir & add the soaked rice. Add 1-1/2 cup water and half juice of lemon. Cover it and cook on slow flame.
  5. Finally add chopped coriander leaves and serve garam garam with raita!
