Forgotten Recipes of Punjab

It is one of the lost recipes of Punjab, which lost its importance with the influence of mughlai cuisine in India.

It’s an aromatic, sweet & flavourful preparation of rice made with assortment of 4 kinds of basmati rice along with simple veggies like peas & carrots, addition of dryfruits, mawa , poppyseeds and saffron infused milk.

This dish is inspired by the very popular floral art work known as “phulkari” in Punjab due to its colourful look.

Ingredients:
  • 2 cups basmati rice
  • 1/2 cup poppy seeds
  • 200 gms paneer
  • 100 gms mawa
  • 1 cup peas
  • 2 carrots diced
  • 1 cup hot milk with pinch of kesar strands
  • salt as per taste
  • 1/2 cup of cashews & raisins 
  • 2 tbsp ghee
  • 2 bay leafs 
  • 1 cinnamon stick
  • 1 tsp pepper corns
  • 2 cloves
  • 4 small cardamoms
Instructions:
  1. Cook rice with poppy seeds till 80 % done. drain the water and set aside.
  2. In a large saucepan add ghee, sauté the dry fruits, mawa, add veggies likes peas & carrots, paneer cubes and cook till veggies are done.
  3. Add salt for seasoning and add the cooked rice.
  4. Pour 1 cup of hot milk with saffron infused. Cover & cook for 5 mins. Enjoy with raita!
