Forgotten Recipes of Punjab

This is surely is one of the forgotten recipes from Punjab, not sure how many here would have heard about this chutney… This is a green Chilly and Onion Jam and spiced with salt and anardana.

My beeji used to make this in dori sotta and this was one of my dad’s favorite… even after leaving our hometown Gidderbaha this chutney was always on the menu whenever there was any special guest coming.

Ingredients:
  • Green Chillies 150grams (mix of dark and light ones)
  • Onion Chopped 150 grams
  • Garlic 4 cloves (optional)
  • Anardana 3 tbsp
  • Sugar 3-4 tbsp
  • Ghee 4 tbsp
  • Salt as per taste 
Instructions:
  • Make coarse paste of onion green chillies and anardana.
  • Now heat the ghee in a pan and fry the paste on high for initial 2-3 minutes and then cook it on slow for 10 minutes now add salt and keep on frying till the masala is nice and brown.
  • Once the masala is done sprinkle sugar and mix till it melts. you don’t have to cook it for too long after adding sugar.
  • Add anardana also in 2 batches initial 2 tbsp while grinding and then added 1 more after adding salt and taste.

This literally tastes like a jam!
